Paleo Zucchini Bread Recipe


1.) 1 Cup Zucchini, Grated

2.) 1 1/2 cups almond flour

3.) 1/4 cup coconut flour

4.) 1 tsp baking soda

5.) 1/2 tsp Salt

6.) 3 eggs

7.) 1 banana

8.) 2 tbsp honey

9.) 1/4 cup coconut oil, melted

10.) 2 tbsp almond butter

11.) 1/2 tsp cinnamon



Zucchini Bread

1.) Preheat oven 350 degrees. Line loaf pan with parchment paper. Squeeze out any excess moisture out of the shredded zucchini. Whisk the almond flour, coconut flour, baking soda, and salt in a medium bowl.

2.) Ina separate bowl, add the eggs, honey, banana, coconut oil, almond butter and cinnamon. Use a hand blender to combine. Add the dry ingredients into the wet and stir to combine. Fold the shredded zucchini.

3.) Pour the batter into the loaf pan. Bake for 40-50 minutes OR until loaf is set. Remove from the oven and let cool completely before serving.
